Start with a BA in Spanish, DN533 which is a 4 year degree. One year is spent somewhere in Spain.

Most interpreters work in 3/4 or more languages, so you'd need to study several.

Pay for interpreters is generally pretty rubbish unless you get some sort of corporate position, might be worth bearing in mind. I have a cousin who does it and barely manages to scrape a living. You'll need at least 3 languages though minimum and in reality 4 or 5 to make a job out of it.
