Beef jerky recipe

    Posted this in healthy cinema snacks thread but thought it'd be more visible here:


    Jerky "Recipe"
    Get a piece of sirloin steak, as opposed to ususal, you want it very lean with as little marbling as possible. Keep an eye out in the "reduced to clear" fridge for bargains
    Put it in the freezer or about an hour till it is partially frozen, makes it easier to cut thinly.
    Slice the meat in thin slices across the grain and on the diagonal so you get nice long & wide strips.
    Put these in a ziploc freezer bag.
    Add a slosh of soy sauce (or coconut aminos if you don't do soy). You could also add spices but it doesn't really need it.
    Leave for 4+ hours or overnight.
    Preheat oven to lowest posible setting - I have a gas oven and it it on S which is cooler than gas mark 1
    Put a rack over a baking tray and lay the pieces of meat out nice & flat (you may need to do several batches).
    Cook for approx 1hr , turning over half way. Keep an eye on them!

    I didn't see any there, they all had either soy, sugar or liquid smoke.
    I'm going to try just putting a little bit of herbs and spices, the ones I use for cajun spice, no liquids. I got the butcher to slice it up for me.

    Roughly how much €€€ per 100g of jerky does this work out as, do you know?!

    I think I paid €2.85 for 50g of Biltong today.

    Just checked the cavemansupersnack.ie webpage and you can get 50g for about €1.85 when you buy in bulk.

    Hanley, if yiu have the packet can you check if the billtong is sugar & soy free for me?

    Will be interesting to see how it works with no soy etc Orla, I would have thought it'd need some acid to tenderise the meat.

    200g of irish beek = 100g Biltong
    Irish beef, salt, mixed spices, vinegar

    it's all vacum packed and nice looking. If it's cost effective and easy to do, I'll start making large batches of this stuff for myself.

    Great thanks Hanley, nice clean ingredients, price wise it translates to 100g beef = 50g pack for €3.85, so unless your buying steak that €38.50 per kilo it's cheaper, or course you have to factor in your own time and if it's worth it to you...definitely something to do when you sitting around at house anyway...
    I tried billtong recently and it was quite a bit harder than mine comes out....I prefer the chew of mine.

    @siochain, I keep it in a tupperware box in the fridge.
