Hi all the wife is looking to do a vegetable and fruit growing class... Anyone know where any are held in Kilkenny / Carlow area?

Can't help with the classes, but I would recommend telling your wife to join a G.I.Y group: http://www.giyireland.com
There is one in Kilkenny. They're free to attend and there's normally growers at all levels at the meetings.
