Help with boring chicken

    I need a steer on something thats low in carbs and fat that can flavour chicken/turkey breasts.

    Basically I eat mostly just chicken/turkey breasts with either brocolli, spinach or some other green veg for my lunch and dinner.

    I normally grill the chicken/turkey breasts, slice it up and throw them into my lunch box for work. I grill them in the George Foreman when i get up in the morning and throw them in and go for my shower, when i get back down they are cooked.

    Normally I then throw some chilli powder or dice up some chillies and throw them in.

    However im getting really bored of the chicken like this, can anyone recommend a flavouring thats actually good for you and that can mix up my lunches?

    Someone suggested maybe going for different parts of the chicken, more the brown meat for flavour, but this tends to be full of fat.

    You could try and spice it with some chorizo. Or use cayenne seasoning/other spice.

    I use cayenne pepper alright, ive tried using thai green curry paste aswell which is rather nice, i just dont know how good the paste is for me?

    I love Franks red hot sauce, but i cant actually find it anywhere ive looked in London where i currently live.

    I like having spicy food, keeps the metabolism up and i just like it.

    I like the chorizo idea, but is that not a good deal of fat?

    there is soooooo much you can do with chicken its not funny

    1 mix together salt, black pepper, cayenne, paprika, 1/4 teaspoon garlic powder, onion powder, thyme and parsley. Sprinkle spice mixture generously on both sides of chicken breasts.
    2 Heat butter and olive oil in a large heavy skillet over medium heat. Saute chicken until golden brown, about 6 minutes on each side. Sprinkle with 2 teaspoons garlic powder and lime juice. Cook 5 minutes, stirring frequently to coat evenly with sauce.

    I use a season all spice on chicken,havy on salt but makes chicken taste yummy

    That looks delicious! Had a look through the other recipes on the site which also look great. You don't per chance own the well fed paleo cookbook? It is tempting me on amazon.

    Sorry if I'm derailing the thread slightly but Dotcomdolly do you have any paleo style cookbooks and if so which are your favs? :)

    Antisocialiser, well fed is definitely the cream of the crop, I would go as far as to say the only one you need.
    There is a torrent of the pdf out there, I would love a paper copy, it's a beautifully designed book, I think I will treat myself soon, or there's a kindle version too.

    Thanks Dotcomdolly! Yeah I was ideally looking at the paper copy so I could have it in the kitchen and dip in and out of it but the fact that one would have to buy in America and pay full shipping is a bit disheartening!

    It's a pity the book isn't sold anywhere on this isle. The pdf will do nicely though :D

    I love a stir fry with sesame oil and a small bit of oyster sauce. Easy, quick and tasty.

    I eat a lot of chicken and marinate it all. It sounds complicated but it isn't at all and it makes even a grilled chicken fillet taste amazing.

    I get a plastic ziplock bag, throw in my chicken fillets for the next day, add whatever spices you want, a splash of liquid (soy sauce / water), moosh it up a bit, close the bag and leave in the fridge overnight.

    You can experiment with what flavours you use. Chilli & garlic / lemongrass & ginger / tsp thai curry paste. Also basil leaves and a couple of sundried tomatoes blitzed in a blender.

    Also, if you get some of those magic roasting bags and cook your chicken fillets in the bag (don't make a hole in the bag like they suggest), it makes loads of juices and the chicken comes out really moist. You can throw your veg in the bag with the chicken - a healthy "ready made" meal.

    How you can eat chicken every day is beyond me, that's 365 different chickens a year you're eating part of!

    Anyway try Nando's sauces, I could drink the stuff out of the bottle, you can buy it in tesco, just drizzle over whatever meat you're cooking and it's delicious

    Get your chicken a library card...if he /she becomes more well-read they become less boring! :D

    Stir fry with experiments of sauces, spices etc.
    Chinese/ Thai are nice.

    Some of those maggi chicken packets are very low in fat and carbs and they don't add any ww points.

    This is my favourite thing to do with the humble chicken breast:

    Heat pan with some spray oil or a little olive oil, brown chicken on both sides and set aside,

    sautee onion, garlic, mushrooms (or whatever veg you fancy) until soft,

    Add a generous amount of philadelphia light (I choose garlic and herb but there are a few flavours available. They are low in ww points, fat and carbs and really tasty)

    Add some water, wine or chicken stock to thin out the sauce and return the chicken to the pan. Depending on what flavour philadelphia you choose, you might like to add some extra herbs or spice. I like hot and spicy food but for this recipe I love the creamy mushroom sauce. It is so tasty you forget how low fat it is!! Sometimes I might add a small amount (1/2 tsp) of tomato puree.

    I love this recipe served with brocolli and maybe sweet potato. Hope you try and enjoy it!

    Perhaps it might help if you vary the kind of veg/accompaniments that you have with your chicken? There are endless combinations of salad and veg that you could chuck in your lunchbox with the chicken. Aside from leafy greens, you could have tomatoes, sweet potato, carrots, radishes, avocado etc...and you wouldn't be adding to the fat (unless you have avocado) or salt content either.

    I often sprinkle my lunchbox with a teaspoon of unsalted seeds (sunflower, poppy, flax, pumpkin) or almonds, which adds a bit of flavour and crunch - but if you're watching your fat intake, maybe don't overdo them.

    Really tasty. I'd rarely consider mincing chicken breast but it means you can pack more flavour into it. I also made ones in the past using the Discovery spice mix for fajitas. Nice.

    For me chicken is a little like rice, neither on their own are tasty, but are great depending on what you have them with.

    I've never eaten a plain chicken fillet, it would be similar to having to sit down and eat a bowl of plain rice.

    There are hundreds of different herbs and spices, so in different combinations, there's essentially 1,000s of different ways to eat chicken.

    Grilling fillets drys them out. What I normally do is dice up the fillets and leave them to marinade in the fridge over night.

    When ready to cook, place the fillets in tin foil, wrap up tightly and place in the over for 20-25 minutes. Juicy, tasty chicken guaranteed everytime.

    Made lovely chicken from the Well Fed Cookbook on Tuesday night mmmmmmm.

    Generously season chicken thighs with salt, pepper, granulated garlic and paprika. Throw on the George Foreman for 5 minutes either side; HEY PRESTO!

    Served with cumin-roasted carrots :)
