I just moved into an apartment block in Italy and they have asked for my mac address so I can use the wifi.

Is there anything I can't do after giving them this?

I use Expat Shield, uTorrent etc Will any of these flag up as improper use or anything?

    Thanks :)

They could have certain sites black listed in the router settings.

i'd assume they're just using mac filtering as an extra layer of security to gain network access. some services may be blocked by the router configuration but it's very unlikely that they have individual settings/retrictions per each user
