Simple lunch and dinner recipes? All ideas welcome

    Hi everyone - I am a teenage boxer and although I am fairly active (boxing twice - 3 times a week, gym once a week plus cycling), I have pretty poor eating habits, as does the rest of my family. I want to break these habits because I'm hoping to get a fight in the next 2-3 months and want to be in good condition. I have a fairly hectic lifestyle and my choice of food is limited by what's for dinner, so does anyone have any suggestions for healthy lunches and dinners that I could prepare myself easily? I like pasta with roast veg, but obviously I can't eat this every day. All ideas appreciated :)

    You could try this, and it will last you for 2 nights. Get 4 chicken breasts, a red and green pepper, onion and a couple of cups of wholegrain pasta (penne or fusili). Also get a reasonably large jar of tomato sauce, like a Ragu or Domion spaghetti sauce (you could do your own but this is more convenient - just watch out for any added sugars). Fry the chicken breasts in a large pot to brown them, then add the veg and fry some more. Add some seasoning, like pepper and maybe something like corriander, then add the tomato sauce. Once everything has been mixed up, add the pasta.

    Cover the pot, turn the heat down and let it simmer for around 40 minutes eh viola, you have a sort of pasta bake. Plenty of protein and a fair amount of carbs but most importantly, minimal effort and easily 2 nights dining.

    Also stir fries are the business and can be cooked in a matter of minutes. Plenty of ideas here;
