The nearest one I know of would be in Edgeworthtown in Longford. http://www.midlandkarting.net/
It's about a 45min drive from Carrick on Shannon.

or you could try ODD. They are based between Ballinamore and Swanlinbar - about 30 minutes from Carrick on shannon. www.odd.ie
