My current schedule is as as follows.
    All suggestions / criticism welcome.

    Day 1 - Chest
    Day 2 - Shoulders
    Day 3 - Back
    Day 4 - rest
    Day 5 - Triceps
    Day 6 - Legs (inc. 5Km run)
    Day 7 - Biceps
    Day 8 - rest
    (repeat)

The main aim of my training is achieving a high level of fittness as well as increasing strength / size.

Also, I was considering doing 5km runs on my rest days.
Would this have an adverse effect on the weight training?

Id keep your rest days for rest. Maybe put both bi's & tri's on the same day and do some extra cardio on your spare day or even put biceps with your chest and triceps with your shoulders create some more space for extra rest or some more cardio.Sometimes less is more when it comes to these things
