How would something like that not be noticed during the course of cooking?

Hmm, some of their food has really come up to scratch delicious wise recently. I do eat their Italian meals and their cottage pies, yum yum I must admit to my initial surprise. Now if i had found money in their food, happy days!

I hate to be a food nerd here, but technically speaking the "bolognese sauce" you get in jars isn't actually bolognese sauce - it's just a type of tomato based sauce with crap in it.

Bolognese sauce is made mostly from meat & stock and doesn't have any tomatoes in it, except some tomato puree sometimes.

I always break up the mince as much as possible and cook for about an hour otherwise its just like gristle.

The best way to soften mince is to dry fry it until it's browned, then add some stock & simmer for about 2 hours, adding milk every now & again... the milk really softens it up and turns it into a sauce.

This'll make you even hungrier so... the best bolognese sauce ever...

In a big pot, fry some pancetta or streaky bacon till browned
Add 1 chopped onion, 1 chopped carrot, some crushed garlic & a bay leaf or two and saute
Add the mince, a tablespoon of tomato puree, whack up the heat, break it up & brown it really well
Add about a cup of beef stock (Bovril works great!)
Simmer for about 2 hours, adding milk to keep it moist & "saucy".

At the end, add salt & pepper to taste & some nutmeg.

This ragu can be used for lasagne or with pasta for spaghetti bolognese.

    Serves 4.
