What does "XXz" (where XX is a number) mean in relation to weather charts? I always assumed it was just a timestamp (so 18z = a model run at 1800 hours) but given the seemingly random times of release over the last few days (For example, the 12z GFS seems to be rolling out now on Meteociel at 15:41) I'm not so sure anymore?

It is exactly that as far as I know.. 18Z means the input data was taken at 6pm. The model likely takes a while to calculate and I'd assume the data isn't released publicly right away which probably explains the delay
