Help with Diet

Hey, I was wondering if you guys and gals could help me out with my diet. I'm trying to lose weight, and have been slowly making my diet healthier and healthier by cutting out junk. I no longer drink fizzy drinks, or eat takeaways/fast food. Also, I don't eat chocolate/sweets/crisps. I mainly drink water, milk, mi wadi (heavily diluted), coffee and volvic strawberry flavoured water. I want to lose weight, and as of now, my diet is far healthier than it was. It used to consist of sweets, chocolate, junk food, lots of bread e.g (4 buttered slices of toast, a roll, a roll with dinner etc.) and butter and basically all fatty rubbish.
I'm exercising, I cycle to and from school and run 5 times a week, football training and a football match on the weekend. I have also started lifting weights, to add in the exercise. I was just wondering however, is there anything I can do to make my diet better than it is now? Anything to add, or get rid of? I live at home (I'm a teen), so basically my dinner is made by my mam, so I'm not in control of that. Although, I do insist on healthy stuff for dinner, and no junk.

For breakfast, I usually have 3 Weetabix biscuits, with (low fat; so it says, I'm not sure if its the same as skimmed) milk with organic honey, and a coffee with organic honey. It's basically carbs and fibre, so I was thinking about adding some protein. Maybe an egg?
That usually does me untill 11am, break , when I'm in school. This is where I think I need the improvements. My mam makes me a roll (lickle baba haha) and usually this would contain what ever's in the fridge, be it ham, cheese, salad etc. I'm thinking of stopping this, since it's usually white bread and buttered (the roll) and I'm getting plenty of carbs and fibre from the weetabix, I don't need more from the white bread. I was thinking about having a small portion of pasta, y'know the cold one which has bits of salad in it sometimes. I think that might be the healthier option, for weight loss anyway. Or possibly some tuna salad.
At 12.35pm break in school, I usually just have a Nature Valley bar and that's it.
When I get home (4ish), I have dinner. Now this varies everyday (like the roll for break), so I dunno what I'm getting most of the time. I just eat whatever's handed to me and that's dinner over.
At around 6/6.30, I have some fruit. I know that's just an insulin spike, so I was thinking of either substituting it for some veg, like broccoli or carrot sticks. Possibly I could get a protein shake, although I think it may be to high in calories to have at that time (last meal of the day).

Any help at all will be appreciated. If you can tell me what to cut out, add in, or substitute, it would be brilliant. I'm willing to eat Porridge for breakie if it's makes a notable difference compared to weetabix.
