Here's a recipe for breakfast/lunch, esp on the go

    - I made half quantity (6 eggs - I used omega 3 enriched) and got 12 out of it. I used paper cases in my muffin tin & the egg sticks to the paper a bit, but the ones I made in silicone cupcake cases came out really well.
    I also omitted the peppers.

    Egg Cupcakes

    10 -12 eggs whisked well

    1 green onion (I used 2 shallots)

    2 zucchini (courgettes)

    3 big handfuls of spinach

    1/2 a jar of roasted red and yellow peppers

    6-8 slices of COOKED bacon

    sea salt and black pepper to taste

    Preheat oven to 350 and grease with olive oil two muffin pans. Whisk all your eggs in a big bowl. In a food processor throw in the green onion, zucchini, bacon, and peppers and process until finely chopped but NOT smooth (yuck…). Add this mixture to your eggs. Throw your spinach into the processor and finely chop and also add to your eggs. Mix the egg mixture well and using a 1/4 measuring cup, fill the muffin pans (you’ll be able to make 18-20 cupcakes). Bake for 20-25 minutes or until the eggs are set in the middle. These are great to take on the go and I like mine with some sliced avocado and green salsa.

    Thanks for the recipe - sounds yum and very handy. Bit sick of porridge for breakfast. Any idea of the calorie content of each (I know I'm being lazy and should really work it out myself :D). I suppose you could really take out / add in whatever is in the cupboard or fridge. How long do they last? Do you store them in fridge or air-tight container? Sorry for all the questions!

    I didn't work them out myself but when I did a search on MFP I got this

    Yes you could definitely add in whatver suited - as long as they didn't weep liquid when cooked like mushrooms or tomatoes - as that would make them soggy. If you weren't avoiding dairy I think cheese would make a good addition.

    I made mine on Monday evening and put half in a lunchbox in the fridge and the other half in the freezer so can't report back as yet as to how the frozen ones will be. I reheated one for 30 secs in microwave from fridge and it was fine. They are also nice at room temp.

    Did you oil it? Did they taste ok when you got them out?
    I used the silicone bun cases and they worked great.

    Yeh I oiled it.

    They were ok. Didn't find them very filling though.

    Me too, made them a couple of months ago - ended up throwing out the muffin tray!:eek:

    I did them at the weekend - 2 different sizes. In the normal size tin muffin tray I used cases and they were fine. In the rubber type mini muffin tray I used oil and they were fine too. My 3 year old helped me bake them but didn't like the taste :rolleyes: - neither did her older sister so there are lots left for their Daddy and me to eat :) I like them but founf them a little bit bland so next time might add some spices / chili.

    Actually I was looking at the Everyday Paleo book on Amazon the other day - recently quite a few people have been saying that while she is amazing and inspiring herself that actually the recipes are not that good...
