Nuts and Beans...recipes please!!

    So I really enjoy cooking my own meals from fresh ingredients. I never use jars of sauces or packets of anything and always use fresh herbs, meat, veg, fruit etc. I'm sort of on a diet re-vemp at the moment. And when I say re-vamp, I really just mean that im getting bored of making and eating the same meals so I want to add more of a variety into my diet and really want to start adding nuts, pulses and beans into my diet as I currently don't eat them.

    Could anyone recommend some recipes or ideas for lunch or dinner meals? I'd even like to try substituting meat for them also!! :) Thanks in advance for the help!

    Hi there,

    I and my family are vegetarian so use a lot of beans and pulses in our meals. It is easy to substitute meat in say a curry, chili or hotpot with things like chickpeas, kidney beans and lentils. Just cook up the veg as normal with your herbs, spices / sauce and then add the pulses towards the end. Serve with brown rice / cous cous / quinoa. Red lentils are also great in homemade soups - just boil them up (they don't take long) and then add them into the soup - great for thickening purposes too.

    At the weekend I often make homemade hummus with chickpeas - great as a snack with carrot and celery sticks particularly when you get the munchies and want to be healthy.

    Bean salads can be great for lunch - just add a few sppons of a variety of beans (eg. butter beans, pinto beans, chickpeas, blackeyed beans etc) to lettuce, peppers, tomato, cucumber etc etc. If you're using tinned variety make sure to rinse them.

    Green beans are quite nice in risottos.

    Substitute the meat in a shepards pie with kidney beans - called a shepardess pie :)
