    So just an update on my problem, had another plumber call around and have a look turned out my initial thoughts were correct, the thermostat was too short for the immersion, the water was only being heated at the top of the tank.
    He swapped the 32" immersion that had an 11" thermostat with a 32" immersion and an 18" thermostat and now we finally have lots and lots of lovely hot water.

    I want to say thanks to all who replied here to my query it really helped me eliminate various bits and pieces and it helped me out answering the plumbers questions before he started.

    I'd still replace the cable with the join with a continuous length from the immersion to the switch....
