Trying to lose weight (again)

Probably the third year in a row I'm posting looking for advice, but I'm actually paying a bit more attention to what I'm doing this year.

Anyway, long story short, since the start of July I've lost 17lbs, with a goal to lose a total of 50lb by Christmas (average of 2lbs a week) and lose a further 35-50lb by next July. 35 being the goal, 50 being the main target I'm aiming for.

Go to the gym 4 times a week, though from next week I hope to go 5 times, or replace a gym session or two with cycling (weather permitting).

    Current diet:
Breakfast - Microwave porridge with low-fat milk (tried making the porridge with water but really didn't like it)
Lunch - Brown bread sandwich with turkey and ham
Dinner (Normal) - Meat, half portion of potatos, small bit of veg (don't like veg but trying to eat some and build it up gradually)
Dinner (Gym days) - Omelette with ham / Scrambled eggs
Snacks - 2 Activia fat free vanilla yoghurts (I tried dried fruit and hated it, and I have a slight nut intolerance where I can have some nuts, but best not to)
Drinks - Small glass of low-fat milk in the morning, rest of the day is water with maybe 1 cup of coffee during the day

    Current gym routine:
    2 x Cardio days
    - 10 mins rowing machine
    - 15 mins cross-trainer
    - 10 mins treadmill (walking 6km/h)
    - 15 mins cross-trainer

    2 x Cardio/Weights days
    - 10 mins rowing machine
    - Bench Press
    - Bulgarian Split Squats
    - Lat pulldown
    - 15 mins cross-trainer
    - Low Pulley
    - Hip abductor
    - Barbell curls
    - 10 mins bike

Now, I've been losing weight at a steady pace. My main concern at this point is what I eat. I joined Myfitnesspal which based on my height/weight/goal gave me a calorie goal of 1750cals per day. Most days, I'm slightly below it, even when I over-estimate portion sizes just in case. On gym days once it takes into account exercises I've done, I end up at about 1200cals. I'm afraid that I may be putting my body in starvation mode. Problem is, I can't see how I can eat more, as with the food I eat now, I'm pretty much set for the day.

Also, I know my current diet could be greatly improved upon. My plan is to stick with it to reach my goal for Christmas, then after Christmas having lost 50lbs, chances are I'll be hitting my plateau, so then at least I'll know how to improve the diet then. And given that I'll be 50lbs lighter, I'll be taking up a Couch25k plan and will begin doing a better weights programme in the gym.

Any advice/criticisms welcome. I would point out that I can't really run yet due to a problem with my right leg, which is why I do the Bulgarian split squats and hip abductor, but hopefully it should be better as time goes on.

    Thanks
