Leave it till its defrosted fully through and its not hard in the centre , I usually leave it overnight .If you dont have much time , Put it in a sealed bag and weigh it down in some COLD water , you can leave the tap on a slight trickle or replace the water in the container every half an hour , shouldn't take more than an hour and a half with this method.

So if I want to eat it at around 5pm, would it be defrosted if I put it in the fridge at around 10pm the night before? I'm paranoid about defrosting meat!!

Why are you paranoid? I get being vigilant against bacteria etc but this mindless hysteria, usually about chicken and defrosting, is so tiresome, 80 threads later.

Once its defrosted It'll be good for another day or 2 in the fridge , Putting it in at 10pm sounds alright .

When it is half defrosted you can then score it with a knife,

this will help if defrost quicker, also makes it cook easier/quicker and you can see the centre better, and gives more surface area for marinates etc.

If I am in a real hurry I sometimes fry the frozen fillet gently, so it starts to defrost, then take it out half done and chop it up finely and fry it off again. Another trick is to butterfly the breast or chop if up finely before freezing.

I nick bags from the butchers counter in supermarkets and lay the butterflied chicken out flat in the freezer in them.

I just stick it in the microwave and click the defrost button?? I have never gotten sick from doing this so surely that's the quickest way?
