This is the worst thread possible that I could be reading at this moment in time. I am absolutely starving, slightly hungover so have the munchies. I didn't get anything into the house yesterday so fridge is empty, nothing in the freezer bar frozen veg and all the shops are closed on Sunday

Did a bit of an experiment for lunch today (serving 4 in total) using what I had in the fridge.

8 Chicken breasts, pan fried (in butter & oil) to seal, then put into a casserole dish.
More butter into the pan, fried onions & garlic. Then added sliced mushrooms. Then added halfed cherry tomato's (very soft, would have had to throw them out next day or two so thought I might aswell use them up) with salt, pepper & balsamic vineger.
When softened I added this to the casserole dish & put into the oven for 15mins.

Served with ultra-skinny homemade chips, these were nearly wafer thin.

Everyone enjoyed it & I loved it so it's added to my book as one to do again.

Gooey mash - my OH is a FANTASTIC cook but struggles with the mash (I always have to do it). You have to drian the spuds really well and make sure there's no moisture left. A tea towel over the pot helps after draining. The butter, salt, white pepper and freshly ground black pepper. Nyom, nyom, nyom! :pac:

It's like a flashback to Ireland in the 80's. They don't open on Sunday or Bank Holidays. Petrol station shops are open but you wouldn't get 'dinner' type food in them.

Theres a lot to be said for frozen veg and pasta ,throw in the frozen veg when the pasta is nearly ready.
Maybe even mix in a tin of tuna after straining.
Handy ingredients that last for months

Frozen veg - use it all the time, nothing wrong with it. Everytime I buy a bag of carrots half of them end up getting thrown out.

Pasta - Lasagne and Spaghetti Bollock I like, missus likes pasta bake type things which I just find too heavy. Then again I'll happily down 3/4 spuds while she will only have one.

Tinned Tuna - we give that to the cats as a treat. never eat it ourselves. The cats will only eat John West so even they know most of it is muck.

Ah no ,I just felt sorry for the poster whos stuck with a pot noodle.

My common dishes are things like lamb chops fried with peppers and some garly mashed potatoes lightly toasted in the oven.
Or chicken with wild mushrooms and cherry tomatoes with some garlic and black pepper ,usually with baby potatoes.

Im trying to cut out bread a lot at the moment ,so using wraps with chunky chinese leaF lettuce for crunch ,usually with onions ,peppers and tomatoes ,or tuna :)
