Hi My mother has to stick to a renal diet.
I am not looking for specific medical advise here just to be clear.

I was hoping to get some help from people who have lived with this for a while and could maybe give me some tips on seasoning food, nice meals and treats.

My mother is in her 70s and says she has no time for this at her age. I want to try and put some interesting ideas and easy food to cook. As you can imagine no sweets, goodies or salt is a bit of a drag especially if you are in your 70s and used to love your food.

Any tried and tested websites would be great too. I have googled a good bit but i haven't had much luck.

could you be a bit more specific about what the dietician has stated is ok and what isn't? not many people here are gonna know the ins and outs of a renal diet

I am new to this too.
From what I was told she has to reduce her sodium and potassium intake.
She is diabetic with kidney problems.
We got some diet information from the hospital but its a bit limited.

The Renal diet is tuly one of the toughest, most resirictive diets out there. My mother has been on it for four years. There is nothing you can eat alot of, all fruit and veg is limited to specific portions e.g. two slices of tomatoe per day. High energy foods such as nuts, beans and lentils are a big no no. Liquids have to be limited to 1 litre a day, including tea, soups etc. I'm sure in the info it said to boil potatoes twice, i.e. rapidly boiled, water strained off, fresh water added boiled again. This is actually very important as my mother suffers badly if she eats spuds not done this way, even though the spuds do end up crap.
On the upside with a bit of creativity, you can make some great dishes and still really enjoy food. There's a great cook book called truly tasty that you can get from the the Irish Kidney Association which has recipes from lots of notable Irish chefs.
Hope that helped and best of luck.
