Hello all, my husband and I are trying to eat a little bit healthier and hopefully lose a few pounds in the process. As it's summer, we have been having salad (spinach, lettuce, tomato, spring onion and the like) for our evening meal, but are struggling to fine low cal healthy food to bulk up the salad. Obviously there's chicken, but that gets boring pretty quickly. All the things we used to eat for dinner (steak, sausages, chicken kiev, lasagne, mince etc) are all quite high cal. Also, my husband hates fish of all kinds which is a pity. Any ideas? What do the healthy folks here have for dinner? :)

I try and have as many salads as i can too and i know ur pain.

I know he doesn't like fish but try marinating/seasoning the fish.

    I have
    -Smoked makerel/smoked trout
-Buy a filler of salmon and rub cajun spice on it and grill. Thats nice with salad.
-Parmegan cheese shavings is also a low fat option I believe.
-Some pine kernels wont bulk it out but help vary it a bit.

    Also try some thai salads.
    - thai beef salad
    -papaya salad

    these two are savage,

dinner should consist of meat(just cut down on portion size) and veg/salad really, wouldn't really look to much into calories in meat as long as its lean ,it'll be full of protein (try minute steaks for example)

if you stay away from the real starchy foods that are full of carbs ie breads , pasta, rice (although having these twice a week would not kill you)
diet is all about balance ,
what do you have for the rest of your meals ie breakfast/lunch?
and what sort of sauce would you have with salad's ?

with summer kinda here, why not bbq the chicken? Tastes soooo good cooked like that, or make chicken kebabs with veg. or look up some marinades to cook the meat in?

Try making home made turkey burgers, they are delicious. I mix the turkey meat with chilli flakes, grated ginger, garam masala, onion, some pepper and a little beaten egg. Then roll them in flour (whole wheat or spelt of course!) and grill. Or you could have roasted sweet potato, cut them into chips and roast, yum.

Same dressing as done by donal Skehan the other night?
Have you tried it? I assume you could use olive oil instead of the sunflower

Turkey steaks are a nice alternative to Chicken Breasts - they are lean and pretty cheap also.

Your husband might like Tuna Steak...its a meatier style fish and is much nicer than the tinned stuff...I love it!!!

Thanks for all the replies and the great ideas. Hubby can't eat fish of any sort, so that rules that out. I've just realised how limited we are in what we eat! All the meats we previously ate are really unhealthy! I will definitly be adding lean steak and turkey breasts to our menu though. I hate Pork and Lamb, so that also rules them out. Any other suggestions???

Chicken on its own is fairly boring but lately I've been marinating it in soy sauce, garlic, lime juice, coriander and thai fish sauce and then grilling it and having that with salad, it's sooo tasty! The lime juice tenderises the chicken and makes it nice and juicy.

I add things like chickpeas, kidney beans, cashew nuts, feta cheese, etc. to my salads. Definitely makes for a more enjoyable and filling salad. Also warm beef in a salad is delicious.
