cooked rocket - good idea or bad idea?

    Just wondering if anyone ever eats rocket cooked & what it's like?

    This might be a ridiculous question, but I've only ever eaten it cold / raw, and that's the only way I've ever seen it served / suggested. :rolleyes:

    So would it be as nice cooked? Probably thrown in to a stir-fry instead of spinach. :confused:

    I have had it in a chilli prawn linguini
    and in a new potato, chorizo, potato bake I do
    In both cases it is stirred through just before serving, so wilted rather than cooked.
    I think it goes better with mediterannean flavours, can't imagine it in stir-fry tbh.

    works well mixed with some basil in a pesto but its going to wilt so not going to taste nice cooked

    Here's the recipe for the bake

    500g baby new potatoes
    200g chorizo cut into chunks
    1 red + 1 yellow pepper cut into thick strips
    1 jar Sacla tomato + chilli sauce
    100ml water
    thyme - dried or fresh

    80g baby leaf spinach or rocket
    creme fraiche or soured cream

    mix all the ingredients except last 2 in a roasting dish. Cook at gas 6 for 40+ mins until everything is well cooked.

    Stir in spinach/rocket to wilt. Serve with dollop of creme fraiche.

    sounds lovely but you are well up on at least 1,500-2,000 cals for that bake so go easy on the portion sizes

    Very rough numbers;
    Spuds are 470
    Chorizo is 910
    tomato/chilli 405

    Brings it to 1800 (round up for the peppers)
    So depending on how much creme fraiche is used between all portions

    I'd say 2000-2200 calories total

    That recipe serves 4.
    You could always omit the creme fraiche (I rarely use it) or use the half-fat one if you wanted to bring it down a bit.
    Just checked the press and the chorizo I use is 280g and I always use half of one, so you also can reduce the chorizo to 150g and there is still lots. I cut it into half moons to make it go farther also.
