Quite a few Questions (roasting nuts, sweetener, oil)!

    Just a few quick questions that have been wondering about:

    1) Roasting nuts - Recently, I have started making my own almond, hazelnut, and cashew nut butters (so much cheaper!). Sometimes I roast the almonds in an oven at about 200 degrees before blending them. Does this have a negative impact on the nutritional value?

    2) Roasting with Olive oil - I know frying with olive oil destroys a lot of the benifits, but what about roasting in an oven at 200 degrees? For example, my mum often makes roast turnip, parsnip, onion, potato, etc. by coating them in olive oil and roasting for about an hour.

    3) Sesame oil - As far as unheated oils are concerned, how does sesame oil do in terms of nutrition? I put it on salad/cold pasta.

    4) Sunflower seeds - Sunflower oil is generally regarded as not good for you, but how about sunflower seeds? Am I right in thinking that these are okay because they are not heated like the oil?

    5) Sweetener - this is a question that will probably spark a debate, but nevertheless! I do not follow a low-carb diet, but try to eat unprocessed foods, and attempt to keep an eye on my sugar intake. I pretty much avoid all added/processed sugar, but do eat bananas, apples, milk, etc. When it comes to baking, I usually opt for honey or maple syrup, but I'm wondering if there is a better alternative. Obviously, no sugar product is going to be 'good', but I've seen numerous products in my local health-food shop, such as molasses, something called 'suncanat', brown rice sugar, etc. As you can see, I'm a bit lost!
