hi,

I'm trying to make my own mother kombucha.

The problem is that I’m caffeine sensitive. Every recipe instruction on the net say that you need to start your culture with a bought kombucha drink.

Obviously I don’t want to do this because there will be trace of caffeine in it.

I’m going to make it with rooibos tea because it has no caffeine in it.

Do you just boil some water? add sugar ? Brew the tea and let it ferment for a couple of weeks?
