Going travelling end of Aug and really want to get more defined and bulk up my muscle a bit. I am fairly slim, 5'10, 73kgs.

Only back in the gym so want to work on easing myself back in just for the next few weeks to improve my flexibility (had an injury some time ago) and get my diet completely correct before I start lifting seriously and heavy.

Whats the most important things for building up mass in such a short space of time?

How much is significant? You could definitly get a good alot bigger and stronger in that time if you were progressively lifting heavier and eating more food.

I'm not sure exactly how much bigger I wanna get. A couple of kilos? Just want a more defined frame rather than a slim one.

Providing my diet is right, what kind of progression should I be aiming for? 3%? 5%? Should this be weekly, or fortnightly?

When shoulld I up the weight, when I can do say 12 reps in each set or what?

You can increase mass in 5months.
If you work hard, you add an amount of mass thats quite significant for 5 months training
