wholemeal pancake recipe??

    I have started a diet and heard that wholemeal pancakes are a lot healthier than regular ones made with white flour. Can anyone tell me if this is true and suggest a recipe for this as i have seen a few recipes using coarse or very coarse wholemeal....any quick and easy recipes out there? Thanks in advance

    If you were looking for a healthy pancake, I'd be more inclined to skip the wholemeal completely and make an oat pancake instead. You can throw your oats into the blender to make them more flour-like and then use like ordinary flour.

    thanks eileen, do you know if they are higher in nutritional value than normal pancakes and if they are less fattening...thats my main goal with this at the moment. Just finding alternative healthy ways to make the food i normally eat

    It would be better nutrition. Or if you have some, you could use whey to make some very high protein pancakes.

    Overall, pancakes are not the ideal food if you are trying to cut back on calories. They pack quite a lot of cals for the amount of food you get.

    Oatmeal pancakes keep me full forever!

    I use one esspresso cup oatmeal (sorry, dont remember the grams)
    2 egg whites
    esspresso cup of low fat cottage cheese
    vanila
    cinnamon

    in the blender, then none stick pan 2 minutes each side

    this is the most filling breakfast I know - and keeps me full for hours
    caloreis about 170. I eat it with mash fruit and drop of vanila. (another 70 calories).

    +1 on the oats instead of wholemeal flour. Tried wholemeal flour pancakes once. Never again. Dreadful stuff.

    My favorite pancake recipe: (YUM YUM)

    Protein Pancakes

    Ingredients

    * 1/2 cup oats
    * 1/2 cup fat free cottage cheese (or low fat)
    * 1 tsp vanilla extract
    * 1/4 cup water
    * pinch of salt
    * 2 scoop's chocolate whey protein powder

    Direction

    1. Heat medium size frying pan to medium heat.
    2. Place the oats, cottage cheese, vanilla extract, water, and salt in the blender and blend on high for 1 minute.
    3. Add protein powder and give the blender a few quick pulse to incorporate.
    4. Coat the frying pan with oil and pour 1/4 of the batter on the skillet.
    5. After bubbles begin to form around the edges, flip the pancake to cook the other side.
    6. Remove pancake and continue to cook the rest of the cakes.

    Optional - Serve with peanut butter

    This is a recipe I got from a nutrionist, I made them yest and thought they were yum, even fiance ate them and also loved them!!

    1 cup spelt flour OR 1/2 cup spelt flour and 1/2 cup oat flour (can be found in any health store)
    1 cup + 2-3 Tbsp. milk of your choice
    1 egg (beaten)
    2 Tbsp. olive oil (to grease pan)
    1 Tbsp. olive oil (for pancake batter)
    1 tsp. baking powder

    Optional:
    1 banana (sliced)
    1/4 cup fresh or frozen berries

    Toppings:
    -nut butter
    -fresh fruit
    -maple syrup or honey

    Instructions

    1. In a medium mixing bowl, combine spelt flour and baking powder.
    2. Add egg, milk, and olive oil. [If desired, add banana or berries.] Mix together until batter is smooth and there are no lumps.
    3. Pour mixture onto griddle and flip over when bubbles start to appear.
    4. Serve with nut butter, fruit, or jam.
