Well you mentioned Chicken salad, there is also turkey, beef, tuna, salmon, smoked mackerel etc. Change the salad leaves, added vegetables and dressings used to change the flavor, so it does not become boring. I also bring in stir frys, which I eat cold like a salad, or sometimes casseroles or ratatouille with a protein source from the list above, which I heat up in a microwave.

The salads and stir frys I will prepare the night before while I am cooking my dinner. Things like ratatouille or casseroles I will make at the weekend. They will keep for 4-5 days in the fridge and I will have them a couple of times through the week for both lunch and dinner.

How about soup? I bring that to work with me(also teacher). Really easy to make yourself!

anything? bring in left overs from dinner and heat it in the microwave? i do that almost every day in work, sometimes i'll make up a salad and bring that in but normally i'll bring in left overs from the night before.

+1 on leftovers - I usually will make extra portions if it's something that keeps well like curry or stew & bring it in for lunch the next day or two.
Salads are great with couscous or rice or pasta. My fave is tuna mixed with peppers, sweetcorn, onion, tomatoes, cucumber, chickpeas and a bit of mayo :p. sometimes I'll throw in a handful of couscous with it.
Soups are great too - especially in cold weather!!

If you have access to a microwave and a fridge in work there's loads of options!
