Dairy-Free Recipes

    Hi guys, has anyone some nice ideas for Dairy free meals and snacks, stuff that freezes well or that I can downsize would be great, since I'm only cooking for myself:)

    When you said Dairy free, do you mean no cow's milk, or no milk at all? I've a daughter with a dairy allergy, and we can make most things with goat's milk.

    Asking for Dairy free recipes is too broad, since a huge number of recipes have no dairy anyway. Is there a specific type of recipe you want (breakfast food, cakes, ice-cream, etc)

    sorry should have explained a bit better, no milk at all, cant stand goats milk, looking for ideas for cakes/biscuits and if anyone does have an ice cream recipe that would be great

    Well, I have a nice ice-cream recipe but it uses real cream. You could make it with whey, but I suppose that is out too?

    I just googled "Sponge cake recipe, dairy free" and got a load of them.

    yes whey is out unfortunatly, have tried a few of the sponge cake recipes and they never seem to turn out right:(

    Have you tried vegan recipes?

    Here's one for a vanilla cupcake: http://www.theppk.com/2010/11/vanilla-bean-cupcakes-with-chocolate-ganache/ There are lots of recipes out there for biccies too - here's a great one http://www.theppk.com/2008/10/chewy-chocolate-chocolate-chip-cookies/ the flax seed makes them nice and chewy!

    Here's a recipe for a vegan strawberry icecream:

    Swedish Glace do a good dairy free ice cream available in lots of supermarkets, though you might have to hunt around to find the different flavours.

    Unsweetened soya milk is pretty bland, and you can use it in most recipes in place of cows milk - for making a white sauce or something similar, for example. Pure margarine is available in most supermarkets, for a dairy-free butter replacement.
