    I noticed that theres no healthy meal thread..well there is the standby supper & soup & stew threads.....but they are a bit specific..so maybe its time to make one??

    i just made a little recipe that's in my eyes (open to correction) a nutritional powerhouse..its packed with veggies & protein....it can be easily adapted for different diets (low carb,low fat etc).. it would help anyone trying to pack more veggies into there daily diet and has quiet a kick to say the least :D

    Louisiana style chicken & brown rice (optional)

    you will need

    For the marinade

    1 green pepper
    2 cloves of garlic
    1 onions
    1 lime
    1 stick celery
    1-2 teasp of tabasco ( depending how hot you like it)
    1 teasp cayenne chilli pepper
    1 teasp Cajun spice mix ( any brand)

    for the rest of the meal

    2 chicken fillets diced
    2 red peppers diced
    2 onions diced
    4 sticks celery diced

    75-100g brown rices optional ( i use it :D)

    OK then lets get started :cool:

    (1) dice all chicken well and leave in a bowl

    (2) use grater to mince green pepper, garlic,onion & celery into the bowl

    (3) squeeze lime into bowl add the tabasco, cayenne pepper & cajun spice

    (4) Mix all ingredients well together and place in a container and leave sit in fridge ( min 1 hour )

    (5) dice all veggies and set aside

    (6) add some olive oil..for the people on higher fat diets....or frylite for low fat dieters out there :) to a pan and let chicken begin to fry

    (7) after chicken is almost done add veggies and let them cook (they too will soak in the flavors of the marinade)

    (8) serve with some brown rice (optional) and a glass of milk.... believe me your going to need it :p


    just as a side note i got 2 serving's from this..one with brown rice and i ate the second serving without it and cold after the gym


    im gonna ask out of interest just how many servings of fruit & veg are there???:D

    Looks nice, if i wasn't so lazy to look for the charger for the camera i would throw a few shots up! Also my recipes here are pretty boring!

    There's a thread 'post pics of what you eat' or something along the lines of that that might have some ideas in it. I like it because im a sucker for the pics.
