Ideas for Salad!

    Hi all,

    Im starting my new healthy eating regime next Monday, and the plan so far is to put together a big bowl of salad for my lunch during the week. Im hoping to cook all my evening meals on Sunday (Quorn Spag Bol etc etc)(Chicken Curry's)

    Now Im hoping you guys can inspire me... Im so sick of the same old salad ingredients.. So Im looking for some good suggestions..

    One very easy one is grated carrots and a little french dressing. Raisins optional.

    Salad Nicois, - lettuce, green beans, hard boiled egg, tuna, potatoes.

    Thai salads are great .. do a google for thai cucumber salad to start with (sorry i don't have a recipe to hand) but basically the dressing is soy sauce, fish sauce, fresh herbs (coriander, mint, basil) totally delicious and fat free.

    Lemon juice is also brilliant as a fat free salad dressing - it adds great flavour to salad leaves (as it does to chicken breasts or steak after cooking)

    Balsamic vinegar can also be used to sprinkle over leaves, tomatoes, grated carrotts etc

    Nothing is off limits and play around with it yourself ..

    I love a mix of any mountain of veggies you like, a little dried fruit; apricots and figs been my fave, chopped chicken breast/salmon/tuna, drizzled in garlic infused olive oil, maybe some brie to boot too or sun dried tomatoes. Pure filling. Yum.

    I think mixing raw and cooked is good - so I've been having avocado, raw green beans, lettuce, extra virgin olive oil and some oven cooked sweet potato. Throw in some beetroot or chicken or anything else you like

    Baby spinach, pear, walnuts and blue cheese (just a small bit of something with a strong flavour) and a wee bit of olive oil for dressing

    Grated carrot and radishes mixed together - really refreshing!

    Beetroot with mixed leaves and wee bit of goats cheese.

    Cooked Couscous mixed with sultanas, dried apricots, orange juice, lemon juice, and mint leaves

    Carrot sticks with avacado dip (peel and de-stone avacado, liberal squeeze of lemon juice, dash of pepper and mash with fork/pulverise with hand blender)

    all i can think of right now.....

    Any form of thai salad is good - make it full of crunchy veg (finely sliced) and thinly sliced chicken for protein. Dress it with a mix of fish sauce, touch of sugar, chili, chopped coriander or mint. Google for some recipes and you'll get more ideas.

    Salad Nicoise with seared tuna (or even tinned chunks). Leave out the potoates if you want, and you relatively have low-carb.

    Grated carrots with dressing make a lovely snack salad.

    Grill a slice of goat's cheese and put on top of a salad of mixed leaves, toasted pine nuts and veggies of your choice. Make a honey mustard dressing (though light on the honey) to go on top.

    Brrrrrr .... feeling a bit chilly reading this thread. Better go back to soups and stews in a min:-)

    Two of my faves:

    Baby Spinach leaves, chopped vine tomatoes, finely diced spring onions, handful of chickpeas and small tin of tuna with low fat vinaigrette dressing

    Baby Spinach leaves, cherry toms,sliced mixed peppers, spring onions, 3 or 4 falafels cut in half and some diced goats cheese.

    For a bit of a kick, I like to add in some diced Jalapeno peppers to the above

    Just made this - brussells sprout salad and its a weird and wonderful winner - it's really nice. Just waiting on the home made lamb burgers ( should go wonderful with the mint ! ).

    I changed it slightly as I used walnuts instead of almonds but it still works.

    Should have seen the face on the o/h when I said it was sprouts !

    Salmon salad!

    Salmon (poached or smoked) lettuce, peppers + whatever else you have in the fridge. So yummy and filling.
