    Just wondering what people use for lunch?
    As in something that can be prepared the night before and left in the fridge and then brought along the next day.

    Mine usually consists of plain old salads but the same thing is starting to get old now.

    Ive thought about adding meats to it but not too sure if it will keep until munch

    What do people use to spice things up and make stuff interesting??

    Bulgar wheat (which is a bit like cous cous) is really handy. Make up the bulgar wheat according to the packet. I roast some chunky peppers, red onions, courgettes etc.. and when they have cooled, stir them through the bulgar wheat. Put a portion in a lunch box and it keeps in fridge and is super tasty eaten cold the next day.

    I usually make it on a mon and I'll have it for lunch for a few days.

    I make soup and bring it to work in a flask. Honestly - it brightens up any meal - especially in this cold weather! Yum!! :)
    Also, houmous is delicious with crackers - lovely flavour and textures.
