dose lettuce freeze/defrost well?

    hey all

    dose anyone know how well lettuce and mixed greens freeze/defrost?
    would lettuce turn to mush?


    I was planning on making mixed bags made up of various types of lettuce,olives,peppers & red onion - freezing them, and taking them out about 2hours before I put them in sambo


    any thoughts and opinions welcome

    Tesco & some other supermarkets do frozen peppers & onions separately. They would be quick frozen, if done in a normal freezer the water cells expand too much and when defrosted it can turn to mush. The peppers are quite cheap too, compared to fresh.

    I never would have even considered freezing lettuce.

    They are doing dry/fried onions in tesco now, they do them in some asian supermarkets too, I love them, they are crispy and sort of like crisps/snacks.

    thanks for that, I will check out the frozen peppers & onions

    The reason I wanted to freeze the lot together was for convenience

    also If I buy a large value bag of lettuce it doesn't usury last too long

    I get full heads of iceberg, they are better value than bags of ready cut stuff, they also last longer as they are less exposed to air, and probably since they are still sort of "on the stem". Dunno why but they always have very short dates on them in tesco, like 2 days away but they last me ages.

    The full heads also take up less space for the weight of them, I just pull off leaves a few at a time, being careful not to break up the rest -otherwise it goes all brown where damaged.

    chefs store lettuces on a flat tray in the fridge covered with a clean damp cloth,this method prolongs the life of the lettuce by a few days.
