    I noticed that there are a few people here who are interested in coconut oil so I thought this article may be of some use. It seems like there's no end to the beneficial effects of coconut oil!!!

    http://articles.mercola.com/sites/articles/archive/2010/10/22/coconut-oil-and-saturated-fats-can-make-you-healthy.aspx

    It's great for dieters!

    "One of the best benefits of coconut oil lies in its ability to help stimulate your metabolism. Back in the 1940s, farmers found out about this effect by accident when they tried using inexpensive coconut oil to fatten their livestock. It didn't work! Instead, coconut oil made the animals lean, active and hungry.However, many animal and human research studies have demonstrated that replacing LCFAs with MCFAs results in both decreased body weight and reduced fat deposition.

    It does wonders for the skin!

    "In fact, physiologist and biochemist Ray Peat, Ph.D. considers coconut oil an antioxidant, due to its stability and resistance to oxidation and free radical formation. Plus, he believes it reduces our need for the antioxidant protection of vitamin E. Like Dr. Peat, many experts believe coconut oil may help restore more youthful-looking skin. When coconut oil is absorbed into your skin and connective tissues, it helps to reduce the appearance of fine lines and wrinkles by helping to keep your connective tissues strong and supple, and aids in exfoliating the outer layer of dead skin cells, making your skin smoother".

    AND, it's good for your heart and helps to fight diabetes!

    Wow, seems like great stuff.

    Where can it be bought in Dublin? I have been keeping my eye open of late but the closest I have come is coconut milk.

    Bear in mind that the research into coconut oil is on the Extra virgin type, which is pricey. Not saying that the gallon cheap bottles don't have the benefits (I don't know) but that's something to keep in mind.

    Given that the extra virgin stuff is expensive what's the next best alternative say for putting on a pan to cook an omelette?

    Its not that expensive for an omelette. Its like lard, you wouldnt use much.

    I use it for all my frying, including omelettes every morning and 500ml last me 2-3 months. I even use some to pan fry some chips, yum!

    ~~~~~~~~~~TMI ALERT~~~~~~~~~~~~~~~~~
    A half spoon of it is also great if you, ahem, need to 'get things moving'. Guaranteed to get you on the Johnny within an hour or 2.
    I wanted to start using cocont oil lately and bought some in holland and barrett- it was €14.95. The next day I saw it for sale in Fallon and Byrne for €3.95! Don't know if they were different types though- I had thought it was all the same. Haven't used it to make omellettes - does it not give a funny taste to the eggs?
    No doesn't leave much of a taste at all to be honest. It smells funny while your cooking though.
