    Hi. I found recipe for HRT bread on Odlums site which sounds lovely, but one thing confuses me, it states 2 pieces of stem ginger? Is that 'fresh' ginger and if so how much is 2 pieces of it?

    No, stem ginger is ginger which has been preserved in glucose. It is mad sweet. I'm guessing it comes in fairly standard sized chunks in each jar.
