Healthy muffin recipe

    I'm looking for a recipe for healthy muffins with minimal aamounts of the bad stuff- butter, sugar, white flour, i saw one recently on tv but didn't get a chance to write it down. The one i saw was made with wholewheat flower, it used mashed bananas for moisture and sweetness, that's all i know.
    Any help or links would be much appreciated

    wow - what great timing

    I just made these last night and they are fab but a bit more like tea cakes I'm afraid.

    200gsm almond flour (almond meal)
    50 gsm dessicated coconut
    2 teaspoons baking powder
    1/4 teaspoon salt ( I skip this - and its not missed )
    100 gsm (ish) butter, melted
    4 eggs
    100mls ish of water
    Sweetener to taste - I use Xylitol
    Cinnamon and Nutmeg to taste - about 1/2 tsp of each I would say

    Preheat over to 180

    Mix all dry ingredients
    Mix wet ingredients in well

    Pour into 12 muffin cases - 20 mins should do it

    couple of things to note ....

    These are low carbish
    Butter is good - not bad

    Google Gordon Ramsay wholemeal muffins. Did them before. Pretty delicious.
