Flaxseed Bread Recipe

    Just thought I would pass this on to boardsie's

    250g flaxseed .The aldi bag is the exact 250 g
    100g of butter
    2 tsp of baking powder
    5 eggs
    6 tsp of mixed herbs (I only use 2)
    2 table spoons of parmasan cheese

    Mix all the dry ingredients together in a bowl well .

    Melt the butter and add to this the 5 eggs .

    Add the butter and eggs to the dry mix in the bowl and mix together well .

    Place in a greased loaf tin and put in the oven for 20 mins (though mine takes 45+ mins at gas 4 - just cook until knife comes out clean) at 170 Celsius . Place on a wire tray to cool .

    I added seeds to the top on this loaf.
    This freezes well too so I cut it into slices and freeze portions for the week.

    I'd have 2 slices of this each day & no side-effects, but yes I imagine if you ate half a loaf in one sitting you could have bathroom issues!

    Yes, milled flaxseed.
    Or in Aldi it is labelled as Linseed, and then flaxseed underneath, it's with the breakfast cereals.

    Great, I have this in the oven now. It was very flat in the loaf tin - should I expect it to rise much? Going to check it every 10 mins to see if it's cooked.

    It came around half way up in my 1lb loaf tin.
    Mine came up to about the size of a McCambridges loaf, similar texture too.
    Yes I usually start checking mine after 30 mins

    This turned out alright when I made it, I was surprised at how incredibly salty it was, it was a bit much. I didn't have any parmesan so I used cheddar but other than that I followed the recipe. I think I would make it again but I'll use unsalted butter and some really strong pungent herbs to give it a better flavour.

    Thanks for the recipe, definitely a good starting off point for me!

    Gosh I don't find mine salty, very savoury because of the herbs & cheese but not salty..There's no added salt, apart from in the butter. Unless it's the cheddar cheese...:confused:
    Glad to hear it wasn't a complete disaster though :D

    I tried it as well and I liked it!! It was really filling, i was suprised by how much so. I was a bit weird about eating it when I smelt it cos its smells so differnt to my usual bread but its definitely a keeper for me anyway and the carbs are low which is great!! I am going to cut and freeze it later now. Thanks!

    It must have been the mature cheddar I used that made it salty, will try parmesan the next time! Ate a slice today which I toasted and then slathered in a gooey fried egg and it was delicious.

    Finally, a low-carb bread, amazing!

    Great isn't it! I was eating rye bread up till now but this is better if you're watching carbs not just wheat.
    I have 2 slices every morning with a boiled egg (in my cute Cath Kidston eggcup!).

    Based on 12 slices, per slice would be:

    Cholesterol 78.6 mg

    im going to make it this wend, without the cheese and using low fat connaught gold.. i wont bother with the sundried tomatoes either as they make my skin crawl:mad:

    apparently according to dixie chick 1 slice of this is enough, so even at 180 cals a slice (im reckoning with LF beurre) it shouldnt be a problem

    I have this cooling on a wire tray right now :) Thanks for the recipe! I had trouble finding baking powder, though...baking soda seems more common but afaik you can't substitute soda for powder. M&S came to the rescue ;)

    Baking powder is pretty ordinary stock isn't it? :confused:

    I thought so! But my local tesco and a Dunnes in town didn't have any, and they're not small either. I went to M&S on a whim really!

    Even though I made it as part of my healthy eating regime, I think it would be lovely with cream cheese....that's not *too* unhealthy, right? :o

    I have mine with some cream cheese and smoked salmon for lunch! I'd only have it once or twice a week though and I'm still losing weight so I guess its not that bad!! :D

    I love this stuff and forgot about it!!! The one I used to make is this Flax seed Bread and it's very nice but I prefer not to use the microwave so much so will defo be making this one :D:D:D
