Which oils are better then others for cooking?

    Standard oils in our house are olive oil , sunflower oil and recently got some cocount oil but havnt got used to going for it.
    So if frying something which is the heatliest? should I be trying to use more butter instead of sunflower oil?
    My standard salad dressing is half olive oil /half vinegar. any improvements here?

    I'm all on board the low carb approach to eating.

    Coconut oil for frying, it has a high smoke temperature. Olive oil (less so for extra-virgin) and butter are fine too for low temp frying.

    Avoid vegetable and seed oils (too much omega-6).

    Olive-oil/vinegar is fine... some people think vinegar puts too much of an acidic load on your kidneys causing them to leach from calcium stores. Should be fine if you're eating enough fruit/veg/cheese. If it worries you though you can switch to lemon juice as a tangy replacement. I don't tend to go through gallons of vinegar so I don't let it bother me.

    Goats cheese is also nice on salads

    I switched from butter to coconut oil for frying and it's great, the difference in smoke point is very noticeable. I don't need to worry about the oil burning at all anymore, although obviously depends how hot you fry.

    thanks folks, just tried the coconut oil with salmon for dinner and it gives it a nice flavour. I think I may use it instead of the sunflower oil
