Advice Needed Please - putting on weight

I know that there are lots of people on here who are very knowledgable and I was wondering if you could give me your opinions. My boyfriend gave up dairy about 5 months ago to help with alergies and asthma and it really made a difference. However now he is finding it hard to put on weight and he is nearly 6 ft and only 11 stone. His mother is a celiac and he also has a dodgy stomach and psoriasis which is an autoimmune disease and I'm thinking he could be a celiac also?? He had a blood test but it came up negativve although I'm thinking these blood tests are not great at picking it up. I have been trying to encourage him to eat more fats but his nutrition education begins and ends with the old school food pyramid and he is worried that too much fat esp from animal sources will be bad for his heart, I feel exasperated!
Can anyone give me any tips on how to re-educate my boyfriend and also advise of any hearty meals to help him put on a few punds. At this point he is on the verge of eating dairy again as he thinks the lack of fat is causing his loss of weight but this is the last thing i want him to do because it has really helped him.

Even old school nutrition is a big fan of oily fish. Get him eating salmon, mackerel, sardines, etc, and salads made with lots of heart healthy extra virgin olive oil.

It might be interesting to see what happens if he does eat dairy again. If he really does have a problem with it, it will show up quickly, so you'll know it really was the dairy. It's also worth trying out different types of dairy. More people have problems with lactose than with all dairy, so he may well be able to eat hard cheeses which are minimal lactose, but not milk.
