For what is a very low calorie diet, she's wasting a lot of calories on bread and junk.

I'd suggest cutting out the bread, or at least reducing to one slice a day. Multigrain bread is still bread, and the grains add only a tiny extra bit of nutrition or fiber. And if she has any intolerance to wheat, they will really mess her up.

Try swapping the banana and grapes for lower cal fruits. She's picked two very high calorie fruits. Try some strawberries instead. Yummy and much lower cal.

Sugar in tea is wasted calories. Either have lemon in tea, or drink it black, or use a sweetener.

Tuc, Tangle Twister and ice-cream are a waste of calories. There's a recipe floating around for cottage cheese and sugar-free jelly mousse which could satisfy her sweet tooth for fewer calories and give her a lot more protein.

Overall, it looks as if she is not getting enough protein or fat. On Monday, her only significant protein is half a fillet steak and a small bit of cheese. Tuesday, she's got an egg, a slice of ham (I'm guessing it was one of the thin slices of deli ham) and some chicken. Wednesday is the only day that she has anything like a reasonable amount of protein.

Remember, your demands for protein (and calcium) increase as calories decrease.

    Also, where are the fats?

I know a few people (myself included) who find grapes very indigestible, she could try omitting them if she eats them regularly and see if it helps her cramps. Also as far as fruits go they are jam packed full of sugar and are the natural equivalent to pick and mix, I haven't eaten em since last time I read the nutritional info I was gobsmacked!
