Help with food suggestions

Ok at the moment I'm trying to start being a little healthier. A big problem for me is that I have very low amounts of energy when it comes to preparing /cooking food, (I know this could be down to the not so healthy food I eat) and so this is creating a problem for what food I can eat. I was hoping I could get some suggestions for really (REALLY) simple-to-make but healthy food.

One thing I've been trying to find ideas for is Baked Beans. The usual is toast, but I don't really think adding bread to my diet would help (I'm also trying to lose a little weight) as I don't already eat much. I like beans, and as far as I'm aware the reduced sugar ones I eat are probably quite good, they're good for my system anyway :o

Just throwing in a few things: I HATE fish, and nuts, so anything with those is a big no-no. Thanks in advance, if anyone does come up with anything.

As far as I can tell it's:

    Fish (sorry)
    Chicken
    Meat
    Cheese (real not processed)
    Whole grains (in small amounts)
    Eggs
    Legumes
    Healthy fats (olive oil etc)
    VEG (all kinds)
Limited amounts of fruit (due to sugar)

Basically I've been reading and I'm definitely leaning towards a clean diet. No processed junk. Not sure about beans tbh. It's all about real food, not stuff that comes packaged. Also, cooking is FUN!! Check out the cooking & recipes forum for some ideas.
