Nevermind . Found the synching options and disabled it which I suppose will do. Kind of annoying it didn't ask me before doing this

to be fair if it had to ask you every possible yes no it would take you a week to get through the initial start of the phone for setup

The phone / Manufacturer / Google needs to assume a certain number of things about the end user and for the large part people buying smart phones email checking is a basic function they would expect. So its quite easy for them to thing that auto syncing is high priority for many of the users of an Android phone. The option to not do it is there, was easily found and you solved it yourself which shows its at least intuitive.

Unfortunately companies can no cater to ever possibility and options that people might want their phones to be like. All they can do is code in the choices and let you make them.

I seem to have two email app's on my phone one is mail and the other is gmail.
I guess I must have downloaded one of them, is there a way to disable or uninstall one of them?

No need, they're both part of the Android OS. The 'Mail' one is for other accounts, you have to set it up manually

Boardsie Enhancement Suite - a browser extension to make using Boards on desktop a better experience (includes full-width display, keyboard shortcuts, dark mode, and more). Now available through your browser's extension store.

    Firefox: https://addons.mozilla.org/addon/boardsie-enhancement-suite/

    Chrome/Edge/Opera: https://chromewebstore.google.com/detail/boardsie-enhancement-suit/bbgnmnfagihoohjkofdnofcfmkpdmmce
