Trying to get a bit of variety into meals

    Hi all,
    In recent weeks, I've been trying to lose some weight (after finally giving myself a kick up the bum to get going). In the last 2 weeks I've lost 6lb (and been stunned), 2lb in the first week and 4lb last week. I've also started doing Couch to 5k as of Monday.
    My question is really more on variety of food than anything else. I wouldn't say I'm a particularly fussy eater in the sense that I do like a lot of different fruits/vegetables/etc however I'm finding variety in dinners especially difficult. I don't eat fish, beef or lamb and pork only rarely. So I'm primarily tied to chicken as a meat in dinners and as you can imagine, this can get pretty boring pretty quickly.
    Typically for breakfast I have a glass of juice and either porridge, Shredded Wheat, or fruit and yogurt if I'm in a rush. Not a big fan of eggs so scrambled egg or omlettes are pretty much out.
    Lunches usually aren't a problem, but dinners are proving to be a nightmare! I try to incorporate plenty of veg, and generally avoid rice/pastas. The odd time I'll have noodles e.g. in a stir fry.
    I guess what I'm trying to say in a very roundabout way is, can anyone recommend some nice, healthy dinners that'll add a bit of variety to my days. I'm trying to lose 18lb and have 6lb lost so far, so I am doing well, but I'm afraid the monotony'll get to me and I'll end up back to frozen pizza and pasta bake :eek:
