A little break from porridge?

    So I finished off yet another packet of porridge this morning. I love porridge and have it every morning. I don’t like milk though really so I make it with water and to keep myself full I throw in a spoon or two of a random mix I have made up (bran/sesame seeds/pumpkin seeds/sunflower seeds) and a small bit of honey.

    Now I do really enjoy my porridge but I think I’ve eaten it on average 5 days a week for the last 6 months. I just fancy something different for a week or two.

    I saw a bag of organic bran flakes in the health food shop at lunchtime and was thinking they might be nice with a banana for breakfast. I think this would be ok wouldn’t it? I love how good porridge is so I don’t want to be really bold…

    I know Kellogg’s bran flakes are the devil in disguise...

    Eggs are savage :D Cheap, quick and easy!!! And pure protein so keeps you full!!

    Oat pancakes!

    Take:
    60g of porridge (about half a cup)
    100ml milk
    1 egg

    Blend it all together till its smooth (I used a small hand blender), heat a pan and add a small knob of butter. Pour in some of the mix and cook for about 5min. This will make 2-3 pancakes.


    Found this on here a while ago and finally tried it, they're delicious. You can add anything to these to spice them up. I use a little honey but fruits, seeds, nuts etc. will go great in them.

    Oh wow...they sound amazing. I feel like running out of wok and going home to make them. So you don't add any flour at all? These would be considered healthy then yeah?

    I'm defo gonna make these on Saturday morning and pile them with fruit, seed, greek yogurt and honey. Thanks for the recipe...seems so simply...I'm chuffed!

    I normally blend the oats seperately but I took Ciaran's advice and just threw it all in blender, threw in some xyilitol and cinnamon, left it overnight then cooked this morning and threw some blueberries on it while cooking :D:D:D

    Were gorgeous!!!!!

    I just made them, they are fantastic. I was looking for something to replace my porrage in the morning too, and I love pancakes :D

    Having some blender issues this weekend so have to invest in a new one during the week. Haven't made them yet but I'm definitely going to. They sound delicious. And with a bit of natural yoghurt, honey and berries....mmmm.

    How do they keep? Like could I make a few the night before and bring them to work? I could even make smaller thicker ones for ease if they keep. I have my breakfast in work and facilities aren't great so eggs are out on a weekday and I wouldn't be able to make the pancakes fresh obviously. That's why porridge is so handy for me. Either the instant oats with boiling water or soaked oats from home with boiling water thrown in in work.

    I've kept them in the fridge for up to two days, but you can also keep them in the freezer and just defrost a couple in the toaster in the morning while you're getting ready, or at work. Couldn't be handier.

    Before blending, I throw in some lemon juice, cinnamon, flax seed and at the weekend I tried blueberries. You can also make them without blending.

    If you want to eat eggs, the egg muffins Temple Grandin and Pembily make would be pretty portable! An easy way to get a bit of veg in in the morning too.

    Yes thick ones work well, they can be stuck in a toaster to reheat them, if heated at all. I put raisins in some and they are similar to scones. You could put all sorts on them though, I add no sugar so they are savoury and would even eat them with chicken curry etc. More tips here http://www.boards.ie/vbulletin/showthread.php?threadid=2055002535

    Finally got around to making these this morning. Had them with natural yoghurt and blueberries. Delish!! And filling! Perfect for a change :)

    Yeah they're really nice!

    Don't suppose they'd be so nice if olive oil was used to fry them? The butter is the only bad part of them...

    A lil bit of real butter is not bad at all!!!

    I have cooked them in OO and had no problems - just not extra virgin!!

    Best thing would be either coconut oil (heat stable) or a good non stick pan!

    I made Rubadubs pancakes into scones / muffins!!!

    I made as per the recipe - oats, egg, water & milk, added 1/2 tsp xyilitol, and left overnight. Added cinnamon (kinda addicted), milled flaxseed and baking soda and popped into the muffin tray I use for my egg muffins!!! Cooked at 180 degrees for 15 min!!! Quite moist so prob more a muffin, but very tasty, and next time I will put blueberries in and you have a perfectly healhty breakfast!!! Here is the result
