anyone recommend a salad dressing or sauce that spruces up a basic chicken breast + veg type salad, thats relatively healthy? Anyother ingredient ideas involving veg/ spices ect that you enjoy?

Add in some nuts? I like vinaigrette salad although I'm not sure if vinegar is very healthy, probably not, anyone can clarify? When I do it I use apple cider vinegar bought in the health shop.

Nothing wrong with good vinegar at all especially cider vinegar, funny it's one of those things people tend to assume is bad for them. Just the malt stuff is crap. Might be worth keeping an eye on the cheaper brands of balsamic though, they may add preservatives of flavourings if that's something you'd prefer to avoid.

Oh sorry OP, I make dressings and sauces out of soaked nuts and seeds, peanut butter, tahini, fresh fruit, steamed sweet potato, avocados, roast red peppers anything you can think of really. Just try googling for recipes all you'll find loads of ideas.
