Less cooking More eating (healthy options)

    Hi All

    Was hoping some people hear could recommend some quick options for eating in the evenings. At the moment it seems like i get home prepare/cook/eat/clean up and then my evening is gone, pretty much. What I should probably do is prepare some dinners and have them ready but getting those ready would take some time, and then how long would they last.

    Would be great if I could get healthy options by way of take aways but it's unlikely i know. By the way when i say healthy I don't mean I need to lose weight or anything, need to put on a bit if anything.

    Anyone recommend maybe some dishes I could prepare and freeze perhaps, easy to make dishes ;) Or even take away food that wouldn't slowly lead to me having coronary. Thanks all

    The goulash in the cooking club - week 3 I think, the thai soup in week 5!! Many sauce based dishes are freezable, I always cook extra for a few days, freeze and take out when I need it!!

    Depending on budget M&S do some healthy good micorwave / oven cook dinners!!!

    Most of the stuff I make takes ten minutes to prepare and cook. Throw a piece of fish into the oven, or a steak on the grill, or a sliced chicken breast in the pan, and then add whatever veg you fancy. I rarely meet anything which takes more than ten minutes to cook. If you want to include potatoes in your meals, you can either microwave in ten minutes, or cook a big batch early in the week and reheat as necessary.

    Stir fry, omelette, steak and vegetables, fish and veg.

    Stir frys are amazing and really fast-about 20 mins! I never used to make them and would only have meat and potato type dinners (which would take around 45 mins to an hour to make). Put on noodles/pasta and then in a wok put oil, garlic/onion/seasoning and then put in your choice of meat/quorn/tofu etc. Once thats done put in the veg ( I only put the veg in for a v short amount of time, the nutrients decrease with cooking). I made a tofu and veg stir fry yesterday and it was gorgeous! It was my first time using tofu and I was afraid I would hate it!
