Pancake Tuesday; What do you have on your pancake?

    Lemon and Sugar for me; in abundance! Thin pancakes.
    Alternatively; real butter and sugar.

    I'm not a big fan of Nutella on my pancakes

    Can't just pick one, but favourites are:

    -Sliced banana, condensed milk and raisins
    -Crispy streaky bacon and maple syrup
    -Nutella
    -Ground walnuts and rum-soaked raisins
    -Sweetened cottage cheese and lemon zest

    If anyone is looking for recipes:

    Crêpes (Makes 15)

    • 250g plain flour
    • 4 eggs
    • 40g sugar
    • pinch salt
    • 500ml cold milk
    • 80g butter, melted and cooled

    1. Whisk all until smooth. Refrigerate for 2 hours. Should be the consistency of light cream. Add more milk if necessary.
    2. Cook ~60 secs each side.

    Pancakes (Makes 20-25)

    • 300ml cold milk
    • 4 eggs
    • 2 egg whites, whipped to soft peaks just before cooking
    • 80g butter, melted and cooled
    • 40g honey or golden syrup
    • 40g sugar
    • 400g plain flour
    • 4 tsp. baking powder

    1. Whisk all (except whites) until smooth. Refrigerate 2 hours or overnight.
    2. Softly whip egg whites. Fold into batter.
    3. Cook 1 tsp. batter to test. Should show small holes after 1 minute cooking. Flip - should be light brown. If not, adjust heat accordingly.

    ..chocolate Ice cream is excellent with pankcakes, but then they're more like crepes really...?

    ..for breakfast pancakes, crispy bacon and maple syurup is a must..

    Pancakes with crispy rashers and maple syrup is yum, but Nutella has to be the one pour moi.

    Although not too fond of pancakes definetly going to try that crepe recipe magic monkey posted. With nutella of course.

    Thats 4 of ye so far that have said this,gonna have to give it a try!

    Syrup. But, um, not maple (good and all as it is), but, um, golden syrup. Yes, I'm aware this is tantamount to surrendering my foodie card. It's the spice burger of pancake toppings. But I really like it.

    a friend told me he put a star bar or a moro (cant rem which) into a pancake, rolled the pancake around the bar and ate it with a knife and fork - think i might try that this year. Might pick up a few other bars to experiment with!!!

    Some people have fixed ideas about food, like you can only eat pigs before 11am and I have yet to hear a good reason for it, but its true, many people think it really odd to eat chicken or cows early -pigs? work away!

    Pancakes are just batter, I would add no sugar to the mix in the first place. I like salt on a batter cod and view this the same. One guy said chicken curry & rice, I do the same, it acts sort of like a naan bread. I like chicken balls & curry sauce, I fry up chicken and pour pancake mix over it to make a giant chicken pancake which is dipped in curry sauce.

    Maple syrup is my favourite "normal topping", pricey stuff though, did anybody spot any offers?

    Aldi have it, can't remember the price but its not expensive!

    Put a 400g bag of frozen raspberries, 3 tablespoons of sugar and two tablespoons of Cointreau into a shallow baking tray, covered with foil and cooked for about 40 minutes at 190C - nice and mushy after that. Only takes 20 minutes with fresh berries.

    Also love Nutella but I ban myself from buying it due to issues involving a spoon and an opened jar:eek:

    Oooh I'm liking all the ideas!

    I'm having Pancake Monday tonight as I will be out all evening tomorrow.

    I'd usually just have lemon and sugar, might have one with honey and for dessert might have a bit of chocolate spread on my last :D

    Love pancakes! Smoked salmon, cream cheese and chive! Yum

    Also a big fan of crispy bacon and maple syrup!

    For sweet pancakes, I love greek yogurt and honey!

    My pancakes were a disaster :o
    I have made pancakes every year for the past 6 years, and I can't remember having this problem. The batter kept sticking to my pan, or breaking up. Maybe it's not thick enough.
    I have just read another posters recipe, but I never did them that way. Although it sounds great. So could anyone tell me what ingredients/methods you used, please?
    I failed pancake making :eek: :eek: :eek:

    I love butter, sugar and lemon juice topping!

    Add oil or melted butter to the batter to prevent sticking. And leave in the fridge for 2 hrs after whisking to allow the flour to hydrate fully and thicken. You can also add grated lemon zest to the batter for extra "zing."

    Thank you for your response Magic.Monkey. I would have tried that but I didn't have a real lemon, only the bottle of juice.

    SUCCESS!!! I had already left the mixture in the fridge, so I had more flour to thicken it more. I also had the heat on too high, when I lowered it, the batter didn't stick and burn.
    I made five successful pancakes, 2 for me and 3 for my bf.
    I guess it just took practice!

    Mmm, pancakes. Made some last night and will be finishing off the eggs and milk tonight.

    I just wonder how people eat them, not so much with the topping, but the method. I always roll them up and stuff them in my gob, but my gf had a mess of stuff on it so that wouldn't have worked. She first tried folding it up like a fajita, and then she resorted to cutting it up with a knife and fork which I found comical.

    That's my fav too, and much quicker to make than fannying around with the crepe. I always use a knife and fork - don't really like eating messy food with my hands!

    I have loads of batter left for tonight as well - YUM!

    I'm normally not a big fan of ice cream, but at home in Sweden we usually put ice cream on our pancakes. Its really good:)
