Healthy Food

    Hi,

    I have been going to the gym in the evenings and I don't get home until 9.
    At that stage I am just too tired to cook and stumped when trying to think of something healthy to eat.
    Tonight I had waffles, beans and sausages!!! How unhealthy is that!

    Can anyone please suggest some healthy easy to cook recipes?

    If I am short on time I will sometimes chop a load of veg suited to roasting, then I cut up a few baby spuds and chuck them in the oven. At the same time I will either bake some fish or chicken, it can all go in at the same temperature and I set the timer for about 25 minutes. I can then run off and shower and by the time Im finished my dinner is ready. Omelttes are great too if you fill them with veg and have salad with it.

    I don't think that's too unhealthy - if you have baked beans that have no added sugar and grill your sausages. Waffles aren't TOO bad really. I can think of much worse (and less filling) quick dinners, so you're not doing too badly really!

    Of course, it would be better if you got more veg in your diet. Making a nice healthy stirfry is just as quick as grilling sausages and waffles. You can get ready made-up packs of stirfry veg in most supermarkets - just add some meat or tofu and have a small portion of rice/noodles on the side and that's a pretty decent meal!

    Or you could make fajitas / burritos with some fresh peppers, mushrooms & onions, stirfried in a tiny bit of oil, add some lean mince meat or chicken, or refried beans and some mexican seasoning and then put it inside a tortilla wrap with some salsa or guacamole...?

    Salad is a great accompaniment alongside any hot food too. It does not take long to prepare a decent salad. I usually just get some rocket, throw on some mixed beans, sweet peppers in vinegar, beetroot slices, halved cherry tomatoes, slices of cucumber, some sweetcorn, grated carrot/apple and some seeds. It may sound daunting and like it takes forever to make a salad that is nice, but I have it down to a fine art and can come up with pretty good tasting salads in a couple of minutes!

    If you like fish why not try steaming some fish and some veg? Steaming does not take very long, is very healthy and you can generally just leave it there and forget about it and come back to find it all nicely done.

    I really can't think of much else to say. It really does depend on whether you are willing to be a bit more adventurous with your shopping and dedicate some time one evening / weekend to actually going out and buying the ingredients in advance so they are all there waiting for you when you get home in the week after work! I find it is also helpful to prepare the next day's lunch when I'm doing my dinner, and sometimes even prepare part of the next evening's dinner too. It's all about multi-tasking and making the most of your time!! :P

    pointers i got from people were just as the other posters said. stirfrys and salads and pasta with home made pesto. 3 evenings a week you could just use a meal replacement drink from maximuscle or EAS. all nutrition and protien in them but dont go over board with them,2-3 a week is plenty,try getting actual food for the other 4-5 days.

    Being too tired to cook is just a cop out. Seriously, it does not take that much energy.

    Blend up a soup with cucumber, avocado, tomato, herbs, hempseeds, ect.
    Or fix yourself a salad with sundried toms and guacamole on top or pesto.
    Or blend up a smoothie. this is ultimate fast-food ;)
