Heading over to Florida this July and i'm definitely going to visit Kennedy Space Centre while i'm there. Looking at the KSC website it looks like you could spend a week wandering around the space museum alone before looking at all of the other attractions! Causeway is definitely the way to go. Here's my album of pics from STS-129 and video,it'll give you some idea of what it'll be like. And bring lots of sun cream,you'll be baked alive out there!
