I make this one all the time:

It's quick, easy, tasty and full of vitamins and Omega 3.

    1 egg
1 T soy protein or cocoa powder
    1 T psyllium husks
    2 T fine milled bran.
    1/2 tsp baking powder.
    3 T cold water.

Mix everthing to a sort of batter, should be like thick cream.
Divide into about four muffin moulds and bake for about 15 minutes at 200C or put in a very small loaf tin and bake for about 20 minutes.

Very high fibre, very low carb. If using cocoa, you can add a little sweetener to give a chocolate effect.
