Not talking 4 wheel motorbikes here.
Hamstring are plenty sore after squatting but never the quads.
How can I target the quads over the hams ?

yeah, I agree about the Front Squats.
Also try varying your stance with back squats.
a narrow stance with slow, controlled concentric and eccentric motion will hit the quads a bit more too.

quads are a very easy muscle to develop.

    my routine is like this:
leg extension 1x15-1x12-1x15-1x12(just to get warmed up)
    Leg Press: 3x10
    Single Leg Press: 1x10
    Squats: 3x10
    Lunges: 3x10

The strongest part of my body :)

    Single leg squat
    Lateral lunges
    Frog Squat
    Jump Squat
    Romanian Deadlift

Please do a lot of stretching!
