Are there any companies in Ireland that offer a tracking service for high performance / high value cars / bikes / campers etc. and if so how do they operate.
If a car fitted with a tracking device goes missing who tracks the cars and how?

Yep there are a few companies that do GPS tracking fro cars in ireland...
have a look around at a few...
    here's an example of one
    http://www.*************/cartech/webpages/navagationandtracking/tracking/wired-tracking-Ireland.htm

Basically they have a GPS device onboard attached to a mobile phone sim card.
Depending on the settings on the car, these devices can be in constant contact with a webserver or just used when needed.
You interface through a website that chows you where your car is, speeds where it has been ect... all the stuff you need to know...

They are inexpensive especially for high end cars but there is a monthly charge by the company you buy from to pay for use of their services and to cover the cost of the sim card...

Maybe they've been responsible for some spamming on here in the past?

How about tracking it yourself with something like this??

I am very tempted. Hard wire the charger in so even with the car battery disconnected it still transmits!

BUT, if the thief is smart, they could use something like this:

"Portable GPS + Mobile Phone Jammer - 10 Meter Range":

That phone jammer sounds like fun :)

So what are the hidden costs with the Omni Tracker? Do you have to put in a sim card and top it up?
