Lo carb muffins by special request

    In a bowl combine:
    1/4cup water
    1 egg
    2 tablespoon of flax seed powder
    2 tablespoon of psylium husk
    a good hit of cinnamon
    a drop of vanilla essence
    1 teaspoon baking powder
    Mix til consistency of thick cream

    then bake at 140 degrees for about 8-10 mins they're done when the muffins have risen and are springy

    Makes two normal sized muffins or 6 mini muffins

    Just tried to make them and discovered I'm out of flaxmeal, so I used two tablespoons of cocoa instead. I'll report back how that worked.

    The ones with cooca only were edible, but a bit sticky. Might need to adjust cooking times. When I got my flaxseeds, I made the regular ones and they turned out really well.

    Great recipe, and very low calorie too. Thanks for posting it.

    I'd say any sort of bran, but you'd probably need to use a little less water.

    How many calories in total in this receipe?

    You could work it out yourself Aedh - try fitday.com or just google each ingredient followed by 'nutritional info' and you should be able to find the calorie count for each - add them together and you're sorted!

    I used a pullet egg when I was making it and worked it out to about 150 cals a batch.

    I've been playing about with this recipe, so here's my lower cal, high fibre version.

    1 egg
    2 tbs bran (I use soy bran but wheat or rice should be fine)
    1 tbs psyllium husk
    1 tbs cocoa powder
    1/2 tsp baking powder
    Sweetener to taste
    Cinnamon and/or vanilla to taste
    3 tbl water.

    Mix everything, divide between four silicon or greased moulds.
    Bake at 200C (gas 6) for 12 minutes in a fan oven, 14 in an ordinary one.

    Interesting recipe. Must try it out.

    I make savoury 'muffins' as follows - though I suppose that they are more like quiches without pastry.

    Fry off some onions or leeks and combine with cooked spinach in a bowl. Add crumbled blue cheese (or brie or whatever) and leave to cool a bit. Whisk together 4 eggs and cream, along with seasoning and grated nutmeg. Combine the eggs with the vegetables, pour into a muffin/queencake tray and bake in a warm oven for about 20 mins. Let cool before turning out.

    These are great to keep on a plate in the fridge for snacks. Broccoli also makes a great addition. Add ham or some meat for additional protein.

    Eileen - kudos for this :) Just one question, do you mean level or heaped Tbsps?? And how much cinnamon would you recommend? A level teaspoon-ish?

    I used measuring tablespoons. Level ones. Same for the water.

    Cinnamon is to taste. I just give a good shake, until the mixture has a good smell of it.
